I have posted some pictures of the 2015 crop that were taken today. We have been blessed this year with plentiful rain. We also are fortunate to have plentiful Grass. These are some pictures of the beef we are offering for this year. They will be ready in Novembr and December. These cattle are averaging about 16 months of age. We aim for 1000 pounds live weight. We always slaughter when cattle are gaining weight on good grass. These should average around 950 pounds at slaughter. The biggest sign I look for in telling whether they are finished is the tail head. If the cows tail head is wide, fat and wrinkled then it is depositing fat within the meat and creating the marbling we praise for juicy and tender meat. Grass fed beef when harvested properly should be lean, but not dry or tough. We have some beef still available. We can save you a lot of money over the grocery store.
