Grass Fed Locker Lamb - typically available September - February.
Our Katahdin hair sheep lambs have been raised from birth to harvest on lush grass pastures. Excellent flavorful, high-quality, lean lamb. Lambs are $260, and will hang approx. 40-50 pounds. We typically use Falling River Meats for processing, which typically runs $200+tax. You may also process your own lamb on farm if you are a skilled butcher. Planning ahead for your lamb is important: lambs usually sell months ahead of when they hit butcher weight, so it's critical you get your deposit in early to secure your place in line.
We occasionally have cull ewes and rams as well (hoggets and mutton). These have the same great flavor as the lambs, but yield bigger cuts and are more economical. They are a little less tender, so are more suited for marinating, slow cooking or braising.
