About Wolf Hill Farm: We are three on a ridge top grass farm about 10 miles outside of La Crescent, MN., in the southeast corner of the state. We offer lamb in halves and wholes, tanned sheepskins, raw and spun wool, and roving. Before even moving onto the farm, we planted the row cropped strips to pasture. Our terrain is bluff-country hilly, and therefore environmentally inappropriate for anything but grass and perfect for grazing. During our first spring, we took a collective deep breath and brought on a handful of bottle lambs. Our flock is small 27 ewes this winter, every one of them with a name: Blue Girl is the boss, Lil Walnut the most independent, Moon our beauty, and so on. Stewardship and husbandry extend in equal parts to pantry and pasture so we farm organically and strive for a high degree of sustainability in all corners. We practice a great deal of preventative care so that our animal husbandry does not need to include chemicals and pharmaceuticals of any sort. Rotational grazing is serious business up here - fodder as it is for our sheep as much as our best tool for encouraging grassland birds, building soil, and guarding the open space. To be wrapped in a motley sea of grasses with a woodland edge harboring wildlife and privacy is deep pleasure indeed. It is worth a lot of work. About the Lamb: We feed our flock grass and our own hay along with kelp and mineral. A tranquil six months with mama makes for tender, flavorful meat come November. It is delicious unadorned; fennel, mustards, garlic, olives, mint, prunes, and all curry combinations do it justice as well. We take pride in knowing that our lamb is as healthy for you as for the farm life below and above ground. About the Wool: We have begun working with an on-farm woolen mill nearby to produce a variety of natural-colored yarns and roving from Shetland blend wool. This year we'll be introducing the springy Clun Forest into the mix - check back to see what happens! And then there are sheepskins, tanned beautifully with no bleaching and washable to boot.
