We are offering pasture-raised Dexter beef by the quarter. You are purchasing your quarter on the hoof, meaning your payment reserves your portion before the animal is processed. Buying a quarter means you get a wide variety of cuts at a price that’s better than buying individual farm-raised cuts at retail.
Plus, you have the added assurance of buying meat from a local farm in Morganton, NC, that values providing cattle with a wonderful and healthy life, raised on 98% grass and hay (about 2% organic grain and alfalfa for added protein and training). We farm using regenerative practices with rotational grazing to emphasize improving the pasture and grass and the health of the earth to also aim for optimal health in our cattle. We do not claim to be organic farmers. We certainly minimize the use of any chemicals such as only spot spraying certain weeds that are harmful to cattle and employ a variety of pasture and pest management practices that we feel are safest for the earth, the animals and human health. We first and foremost raise beef to feed our own family as healthfully as possible. We use methods such as hand-pulling weeds, fly spraying with neem and essential oils, cleaning up manure to minimize flies, releasing beneficial insects and we even added an American Guinea Hog to help us by eating certain pasture weeds!
We chose to raise Dexter cattle due to their smaller size; they are dual purpose for both meat and milk, they grow well on pasture, they generally have easy births and are great mothers, and they are known for their good temperament. We believe in transparency. You are invited to request a picture of the live animal you are investing in or visit our farm in Morganton by appointment.
We partner with a local Asheville butcher for a humane and low-stress harvest. The meat will age for 2-3 weeks before processing. Individual cuts will be vacuum sealed. You will make arrangements to pick up your quarter directly from the processor.
And a little bit about the farmers:
Tracey is a dietitian specializing in Integrative and Functional Medical Nutrition Therapy. She received advanced training in graduate school at Colorado State University with one of the founding researchers of The Paleo Diet, Dr. Loren Cordain and also in Sustainable Agriculture. She emphasizes an ancestral dietary approach with her nutrition clients. She has also attended trainings in Permaculture, and Regenerative Farming, including via Joel Salatin at Polyface Farm and CRIMPI in the mountains of Colorado. Tracey also offers nutrition services from her home-based office. Her husband, Craig, is a retired Aerospace Engineer and former Navy Nuclear Reactor Operator; he now puts his brains and brawn to work researching pasture management and animal care, predicting the weather, gardening, fence building, road grading, maintaining farm equipment and much more. We love our work caring for the land to provide the best health for our animals and our family and our local community. And, of course, we love our cattle!
