Hawaii Island Goat Dairy provides Goat Mozzarella, St. George, Gruyere, Chevere, Crotone, Colby and Feta cheeses for the restaurant and market.
The hamburger is free range certified organic beef supplied by Pu'u O Hoku Ranch on Molokai. Hawaii Beef Producers provides local grass fed steaks from Pa�auilo. The Hawaii Island locally caught fresh fish and Kauai Sweet Shrimp are provided by Hilo Fish Company. The restaurant also serves certified organic chicken in all of the chicken dishes.
