Handmade lefse made from locally grown real potatoes. (I buy as many ingredients as possible from local farms such as Ter-Lee Gardens in Bagley, Dyrdahl Farms in Lengby and from the farmers markets in Bemidji and Mentor.) In addition to traditional potato lefse, I make sweet potato lefse, roasted garlic, potato and chive and potato and thyme varieties. And I'm always working on new flavors. I also make Scandinavian baked goods, cookies, breads and cakes as well as jams and jellies from locally grown fruit (rhubarb, strawberries, chokecherries, apples). Scandinavian baking classes are offered weekly. The hands-on classes are limited to only a few students at a time in a fun, relaxed learning environment. In the summer, you can usually find me at the Fosston Farmers Market in Fosston, MN and the weekend before Thanksgiving at Lefse Fest also in Fosston.
