We have a small operation, currently breeding about 60 cows per year. Once the cows have their calves, we watch them closely and decide which heifers to keep (for breeding) and which steers to keep (for feeding out with grain). We have been fine tuning our breeding lines over the years, keeping the best heifers for breeding. We sell off the cows that don't produce well.
In general, our process is as follows
At 9 to 12 months, we finalize the decision about which steers to feed out with grain
At 14 to 18 months, we start feeding grain, for a minimum of 4 months, but usually for closer to 5 months. We watch them closely to make sure they are 'finished out'
At 18 to 24 months, we take the steers to a USDA inspected facility for harvesting. The processing facility dry ages the beef for ~3 weeks, before cutting and wrapping.
