Starting June 18, 2012 we will offer a Whole Hog CSA. This is a 20 week buyer's club where members receive bi-weekly deliveries of our fine heirloom pork.
Each delivery will feature offerings from a different cut, eventually covering every part of the beast. In some cases, members may choose a cured or prepared versions of cut, e.g., guanciale instead of uncured jowl or pate instead of liver and fatback.
Because we do all of the custom butchering and processing right on the farm, all delivery items are fresh and do not need to be frozen.
