The Fort is an authentic adobe replica of a famous 1830's fur trading fort in Colorado. Our menu is based upon the recipes that the Native Tribes and Pioneers ate coming across the Santa Fe Trail in the 19th century, serving an extensive game menu including buffalo, elk, Colorado Lamb and quail. The Fort has won the Governor's Award for Colorado Proud as a leader for featuring and serving local Colorado produce and products. We support the San Luis potato and quinoa farmers, and buy local microgreens. As a Wine Spectator rated restaurant, we have an extensive Colorado wine list, supporting our local wine industry.

Featured in Bon Appetite magazine, the New York Times, and frequently touted as "the best place to take out of town guests" the Fort is world reknown for being an authentic Colorado experience. The Fort is registered on the National Register of Historic Places. Our menu is printed in eight different languages for our international guests.
