We sell our hogs by the half and whole based on their hanging weight plus the "processing" fee charged by the processor. Hanging weight is the weight of the carcass after the animal has been eviscerated. Typically our animals are raised until they are 7-9 months old and weigh approximately 250 -- 300 lbs live with an average hanging weight of 180-220 lbs. A whole hog will yield approximately 120 -- 150 lbs of meat, and a half hog is typically 60 -- 75 lbs of meat. There are many variables that play into the actual finished weight such as the size of the pig, and how you choose to have the meat processed and packaged.
Current prices pork orders for whole or half hog are $4.00 per pound (hanging weight).
ADDITION FEES:
USDA Kill fee: $55
USDA Processing: $.79/lb on the hanging weight
Seasoning for sausage: $5.00/bag (1 bag is good for about 25lbs. of pork)
Sage/Pepper: $1.00/oz.
Price per pound is the same whether you order a half or whole hog.
Processing Costs Include: All pork cuts are vacuum sealed, deboned (optional), tenderized (optional), bag of bones (optional, and pork sausage packaged in 2lb. tubes.
Extra processing cost for 1 lb tubes $.10/lb more on the hanging weight
