How Does it work?
Customers purchase a heritage pig from the Lockhart Family Farm as a ‘weaner’ (i.e. 8 weeks old, or thereafter). They then pay a monthly fee to the farm for the maintenance of the pig which includes all costs related to getting to slaughtering weight. The Lockhart Family Farm will then deliver the pig to the slaughterhouse/butcher on behalf of the customer, typically at 6-7 months of age (*delivery date based upon the pig reaching slaughtering weight). The customer collects meat from the slaughterhouse/butcher and pays the kill fee and butchering fees directly to them. All customers are more than welcome to arrange to come visit their pig on the farm.
How much pork will I get?
There are two terms you need to learn, live weight and hanging weight. Live weight refers to a pig’s weight when it leaves the farm. Hanging weight refers to the weight of all of the meat after it has been processed by the butcher. We will schedule your pig for processing when we estimate it will weigh between 220 and 250 lb. This will give you a hanging weight of around 137lb (roughly 60% live weight). Your actual post butcher weight depends on how you have your pig cut up, some processes here (like boning and curing) reduce the packaged weight. If you save the head, trotters, etc… this is not calculated into hanging weight and are bonus!
