Hello our there! Our family produces 8 varieties of raw milk cheeses made from the milk of our own herd of grass-fed cows. Our cheese will be available at the Hip Donelson Farmer's market on Fridays and Saturdays throughout the summer!
Our cheese begins with our small herd of cows, many of which are heritage breeds. We even have a Milking Shorthorn cross! With free choice minerals, hay, and pasture 24 hours a day, these cows are raised for longevity and quality of product over productivity. We milk seasonally to ensure that the highest quality forages are in our milk. Also, by resting the cows for four months a year we are giving our girls a well deserved break!
Next, we take our milk and make it into cheese in small batches using the same Old World techniques used in quality European cheeses. We hand stir, hand measure, and hand cut all of our cheese!
