I'm a shepherd in Tillamook County and spent years raising sheep here and in eastern Oregon. After much research, I believe I've discovered the perfect genetic breeding formula for animals to thrive here in our coastal environment. We have crossed Dorset ewes with North Country Cheviot rams. This breeding provides a hardy, disease resistant offspring that thrive in our harsh climate without the need for traditional finishing techniques like administering large amounts of grain or the use of growth hormones. The result is a lean, tender, delicate tasting lamb. And because Dorset are not seasonal breeders, we can deliver our product at times best suited for traditional holidays.
When properly prepared, lamb provides a wonderful, unique flavor profile, distinctive from other red meats. It's been a protein mainstay for people from all walks of life all over the world for thousands of years. Maybe it's time to give it a try.
