We believe in sourcing as many of our products via local farmers, ranchers and producers. Items we source are sold in our retail store in Hudson, WI, to our many wholesale clients and via our website. We are members of the Buy Fresh Buy Local Program and currently source and sell the following locally produced products: Grass Fed Lamb Grass Fed Goat Bison Venison Chicken Eggs Quail Eggs Goose Pheasant Berkshire Pork Durok Pork Rabbit Elk Cheese - over 100 types Croix Valley Steak Sauce LLama Alpaca Smoking Wood & Pellets Honey Jams, Jellies, Salsas Veal - Free Ranging Turkeys - Broad Breasted Bronze & Heritage Steve Loppnow one of the owners, known more by his nickname "The Meat Detective", works with small farmers and ranchers to improve animal yields at processing time and also enjoys helping with long term marketing of their products to the end user. Steve enjoys working with the farmers as well as the processors to develop better cutting skills and is proficient when processing venison and elk and currently has a cutting manual that is gauranteed to improve yields for those farmers and ranchers. He also works hand in hand with local chefs to develop and maintain on going products lines for menus and specials.
