I bought a dozen eggs at the Cherry Creek Farmers Market last Saturday (May 7, 2011). Today, I put them in water to boil for hard boiled eggs. All of the eggs stood on their smaller end, which usually means they are about three weeks old...
I am disappointed as I paid $5 for eggs I won't use. Local is great, but if it isn't fresh, what's the point?

I don't know how to judge the age of an egg by placing it in water, but I do know that fresh eggs make cumbersome hard boiled eggs. The eggs from my grocery store are closer to the 45 day mark and are very easy use hard boiled. I suggest if you had problems hard boiling the fresh eggs, maybe let a few sit and age, while you use the others for baking or cooking by other methods.
