Not only is this full of delicious flavor, but I really appreciate that the animals get to go outdoors and have a life. Pigs are intelligent, extra intelligent they say, and the thought of factory farm sows dreadful lives in tight fitting cages has made me never buy that meat. I think if you make the choice to eat meat at least you can support treating animals with respect right up to their last moment. I have had lots of Italian sausage and this may well be the very best.
