Purchased the mesquite smoked cheddar at Issaquah farmers market today. Just sliced through the red wax and thoroughly enjoyed this fantastic cheese from the very first bite. (Please rest assured there were many follow on bites...) Wow, well done Crooked Barrel team! The mesquite smoking complements the sharp cheddar perfectly. Your application of the smoke is perfect, completely natural in flavor and not overpowering. And sealing the cheese in red wax is a nice touch. Again, well done! Cannot wait to get back to the market and load up on some of your other cheeses...
