The cattle graze on pasture during the spring, summer, and fall. And are fed grass hay during the winter months. They are finished on a mix of soy hulls, and distiller's grains to add small amounts of marbling needed in the dry aging process.
Scottish Highland beef is a lean, low in fat, high in protein and iron red meat. Very similar to the qualities of salmon.
