On our small family farm I grow Shiitake Mushroom on Oak and Sweetgum logs in dampled shade.  No pesticides are used in production or near the logs.  I harvest by hand and refrigerate immediately.
Shiitake mushrooms are an excelent source of protein, and have all the essential amino acids in a more condensed form that other sources of protein. They provide essential vitamins and minerals such as A, B, B12, C, D, and Niacin.  Shiitakes have a mild, smoky flavor and are an excellent meat replacement in pasta, soups and stews.  I love Shiitakes lightly sauted with onion and garlic.
Medicinal values of Shiitake mushrooms ranges from strenghening the immune system and lowering cholesterol to diminishing the chances of catching a cold.
