We grow Shiitake mushrooms, Millennium Asparagus, Evergreen Long Bunching Onions, Sweet Basil and German Extra Hardy Garlic. The crop fields are surrounded by conifers, hardwoods, natural plants, shrubs and tree seedlings that we nurture and/or have planted. This vast biodiversity helps to avoid swarm insects and invasive species. We Never use pesticide, sprays or fertilizers of ANY Kind! All 100% natural certified organic spawn, seeds, sources and products!
We're best known for our fresh, "Healthy" outdoor log-grown Shiitake mushrooms which we routinely provide to many local restaurants in Cayuga, Jefferson, Oswego and Onondaga counties from May through September.
We grow them outdoors under a shaded hemlock pine forest. Outdoor grown mushrooms are the healthiest way to grow mushrooms! Like humans, the mushrooms breathe in oxygen and give off Co2 while they feed on the sap wood in the logs. They benefit from intense forest air flows and a smorgasbord of organic pollens with rain water nourishing and feeding the logs with natural vitamins and minerals.
We harvest the trees in February when the trees are most dormant and the logs have the most amount of nutrition in them. Outdoor growing produces a healthier mushroom that is 4-10 times more intense than a button mushroom and more uniform tasting. Our log species of Hornbeam and Maple trees help our mushrooms to turn sweet, with a caramel-buttery, maple flavor after a brief saute'.
*Indoor grown shiitakes - are grown on petroleum-based plastic bags filled with recycled sawdust. They use artificial lighting, mechanical fans, and Air Conditioning units to fake what nature provides naturally. An easy tell if they're Indoor grown is the Shiitakes are lighter in color from lack of UV from the sun and almost always 2" or smaller in diameter. Whenever possible, Only buy Organic mushrooms! Chinese and other mushrooms sometimes have up to 2,200 ppm of Lead so 2-3 capsules would be considered toxic!
We try to schedule our harvests for the same day as our sales. This way all customers receive the freshest, healthy and most decorative looking mushrooms. On the farm we annually purchase tree seedlings from Saratoga and Oswego County Soil and Water for environmental restoration and annual improvement projects. We often use cover crops and legumes to prevent erosion, feed wildlife and to add overall health to our soils. Working in harmony with the environment is our goal, and giving back is the mission.
