We are a grass-based livestock farm in Hinesburg and Charlotte. We raise beef, pork and lamb on a few hundred acres of the Champlain Valley. Beef and pork are available during most of the year, and lamb is available in the fall and winter. Our animals receive no artificial hormones, and we avoid antibiotics whenever possible. All of the smoking, curing, and sausage making for our pork is done without nitrates or any synthetic preservatives. We sell the meat at our farmstand and at the Hinesburg Farmers Market (Thursdays 3:30-7, June-mid October, at the church on Rt. 116 just north of the Town Hall).
The cows and lambs are entirely grass-fed, and the pigs are pastured in season. We are in the process of improving some old pastures by expanding our rotational grazing practices. Our beef herd includes breeds like Scottish Highland and Belted Galloway that do well on pasture. Much of the farm is lightly used or left wild as forest, marsh, and swamp.
