We buy our calves from local breeders and feed only forage products such as bermuda and alfalfa hay on our family farm in Benton Louisiana. They are not implanted with steroids and are never fed animal by-products or antibiotics. Customers actually purchase the calf from us then we transport the calf to a state licensed processing plant. Caddo Packing in Marshall Texas is the plant typically used. They are inspected by federal, state, and local health inspectors to include the Texas Meat Safety Assurance Board.

JTR Farms beef is sold in bulk as whole, half, or split half beef. Customers actually purchase the calf from us then we transport the calf to a state licensed processing plant. Caddo Packing in Marshall Texas is the plant typically used. They are inspected by federal, state, and local health inspectors to include the Texas Meat Safety Assurance Board.
"Hanging weight" is the term used to describe the weight of a side of beef as it hangs in the meat cooler with the useable cuts intact. Whole halves and quarters are sold based on the hanging weight. Excess fat and bone are then removed during cutting, therefore, carcass fatness will affect how much take-home meat a side will yield. Even though grass fed beef creates a much leaner carcass than a feed-lot carcass, there still will be a decrease in meat delivered once fat and unwanted bone are cut away. The customer can estimate the take home meat to be between 60-70% the hanging weight amount. Example: Carcass weighing 520pounds will deliver approximately 338 pounds of meat.
