Wood-Ya-Know Farms located in the foothills of the Appalachians, is a sustainable Beef Farm raising a cross bred of Wagyu and Black Angus in a direct farm to home sales that are raised on pastures and grass. Raising a cross between the Japanese Wagyu bred and the American Black Angus bred creates different levels of a healthier eating experience. The farm is currently raising a first and second cross which is called a F1 and F2 Wagyu for sale.
Wagyu is known for its softer fat and marbling which improves the flavor and taste of the meat. This improvement is due the higher ration of mono-unsaturated fatty acids (MUFA- good fats) to saturated fatty acids (bad fats). Higher ratios of unsaturated (oleate) to saturated (palmitate) fats in Wagyu compared to other breeds have been reported. The higher the concentration of Wagyu would mean a higher level of these good fats. Current production only has F1's for sale at this time.
Our F1's and F2's are Wagyu's naturally raised on the farm with their whole life in pastures, natural environment, and from breeding with registered Wagyu Bulls. We use no growth or hormones and we do not use antibiotics. Raising the beef through mainly grass and pasture and hay means that the natural cycle of growth occurs and the length of time before harvest is longer than most production farms (25-28 months). We are transparent with our operation and welcome those who would like to buy either �?¼, �?½ or whole beef. This is not an large operation, and the availability is very limited at this point in the growth of the herds.
