Black Republican Cherry

A cousin of the bigger, sweeter Bing, the Black Republican cherry has largely fallen out of favor with commercial producers as a result of its smaller size and herbal, slightly astringent flavor. If it is not picked at its peak of ripeness, the fruit can be unpleasantly bitter. However, when perfectly ripe, the Black Republican cherry has the intense, classic taste to which "black cherry flavoring" aspires. Its heavily concentrated flavor makes it a favorite in yogurts and ice cream.
