Unlike regular Jack, Dry Monterey Jack cheese undergoes an extensive aging process, which generates intense flavors as it ages and hardens over the course of 7-10 months. The resulting cheese is firm, pale yellow, and nutty in taste. It originates with milk from grass-fed cows, which is hand-formed into eight-pound wheels. The wheels are placed in muslin sacks, cured in brine and then rubbed with oil, pepper, and cocoaâ??producing a near-black coating that acts as a natural preservative. Today, Dry Monterey Jack is considered one of Americaâ??s finest cheeses, with production centered in Sonoma Count

HLA Country Farm (Talala, OK)
HLA Country Farm is a small farm where we are striving to supply the local community with raw dairy products. We are currently milking Jersey cows and Nubian goats. In the spring and fall we host workshops for hand milking of the goats and cows. We also have workshops for cheese making. We have had participants register as far away as India.
