I thought that I might like to share with you some herb ideas that go with foods. I keep a paper in my spice and herb drawer to match foods with. Maybe some of you might enjoy a list to look quickly at to see what herbs you can use to go with what foods your preparing:

I like to roast fresh vegetables tossed with olive oil and kosher salt. Then I put them in a shallow pan and sprinkle them with chili powder. Roast at 400 for about 20 minutes, stirring halfway thru. Broccoli is so good prepared this way! Radish are, too.

I need help. This is truly a spectacular list, and I can't find a spice pairing for one thing...if you don't have it, I'm willing to best you know what spices or herbs would go best with dried chile peppers. It will be for a cooking oil, but I'm not sure what spice or herbs would play best with the heat.

Here are some herbs and spices that I would suggest using with CHILI PEPPERS, either FRESH or dried.
Black pepper corns, Kosher salt, lime juice, orange zest, fresh mint, fennel seeds, garlic cloves, cilantro, sage Mexican oregano, onion, shallots, other hot peppers such as cayenne, habanero, Jalapeno, chipotle, New Mexicans. Ground cinnamon, ground cumin, fresh grated ginger (try to get Vietnamese or Hmong), coriander seeds, allspice, For a little something different, I wouldn't mind using horseradish. Use either the stuff in the jar at a good grocery store or if you can find it, get the root and grate it.
MOST FISH AND SHELLFISH; PORK; VEAL; CHICKEN
DRY WHITE OR RED WINE.
Nuts! Seriously. I'm making a savory bread using pecan flour because I have a person allergic to almonds and I'm out of hazelnut flour. We're all gluten free. With the almond flour I generally add rosemary, Italian seasonings, and Mrs. Dash. I'm not sure about that going with pecans. Ideas? Anyone? Oh, and spicy (hot) is not an option........ TIA
