Maple Season doesn't end until the last sap bucket is Washed!

It's official!  Our last sap bucket and tubing were washed on April 30th, 2018! What a season! This year was perfect for Swiss'er Sweet Maple and the Lewis County, NY region.  Due to a warm spell in February, we were able to tap our maple trees and produce our "Pure Liquid Gold" early on.  The Zehr family cannot remember a season this early or as long.  

Due to the perfect combination of warm days and cold nights, the sap from our maple trees ran often.  As a result, our spring crop has a beautiful color with the perfect sweetness in flavor.  Many visitors stopped by to watch us produce and taste our maple syrup.

Although the first crop of spring has been harvested, Swiss'er Sweet Maple packages our maple syrup and makes our maple products all year long.  It is the perfect gift for any occassion. And as summer will soon be upon us, and the time is near to fire up those grills, what a perfect time try some maple glazed bar-b-que!

The Zehr family would like to thank all our local harvest customers for supporting our family farm and allowing us to bring our maple syrup from our "trees to your table". We will continue to work hard to bring you the highest quality maple syrup. We appreciate the opportunity to serve you and your family.

Visit and taste the Tradition!

Swiss'er Sweet Maple will once again host it's annual Maple Weekends March 17th - 18th & March 24th - 25th from 10:00 a.m. - 4:00 p.m. 
Our maple shanty is easily accessible with plenty of parking, located 2 miles from Croghan NY. The Zehr family will give tours of the entire maple syrup process from our trees to your breakfast table. Our maple operation continues to mix old maple traditions with new, gathering sap with both buckets and newly installed tubing; as well as producing our "liquid gold" on an oil fired evaporator using reverse osmosis.  Come witness the first true sign of spring and taste the tradition. Our maple gift shop will be open to the public. Free maple samples are available, including our maple cotton candy made fresh on site. Photo opportunities, door prizes, and fun for the whole family. Best of all the event is FREE.  Come and find out how sweet it is to visit Swiss'er Sweet Maple this spring!

Maple for all Seasons!

Maximize the Bar-B-Que Season with Maple

Swiss'er Sweet Pure Maple Syrup is the perfect ingredient for the summer grilling season. Maple Marinades, Maple rubs and Maple glaze recipes are readily available on the internet.  These summer maple favorites are perfect for chicken, pork, beef, and grilled salmon recipes.  Pure Maple Granulated sugar is a perfect substitute for molasses or brown sugar in any recipe.  Not to mention, a perfect addition to the butter on your summer popcorn!  

Not a meat lover, add maple to your favorite salad dressing. A simple recipe is found below:

Maple Blender French Dressing Ingredients:

  • 1 cup tchup                                              
  • ½ cupPure New York State Maple Syrup
  • 1 tsp. salt
  • ¾ cup salad oil
  • ¼ tsp. pepper
  • ½ tsp. dry mustard
  • ½ tsp. powdered ginger

DirectionsCover and blend on high speed for 20 seconds. Makes 2 cups.

Maple syrup is a natural sweetner that is a much better choice than processed sweetners.

It's Maple Season -The trees are tapped!

click to enlarge Swiss'er Sweet Maple's trees are tapped and we are waiting for our first run of maple sap! Did you know that it takes about 40 gallons of maple sap to make 1 Gallon of maple syrup?  It is true! 

  • Sap only has about 2% sugar and could be as low as .5% sugar, and it does not taste sweet to most people. There are many environment reasons for the sweetness of sap.
  • Cold nights (under 30 degrees) and warmer days (25-50) ensure that the sap will run.
  • Swiss'er Sweet Maple uses the traditional method of buckets to collect the sap. Once the sap is collected, it is brought to the Shanty and travels through the evaporator where it is boiled down to make maple syrup!
  • Maple syrup is delicious on pancakes, baked ham, carrots and can be used for baking and for grilling sauces.  
  • Maple syrup can also be made into maple candies, maple cream, and maple granulated sugar.
  • Most importantly, the sweet treat makes a great gift for anyone anytime of the year!

New Grading System for Maple Syrup in NY

NY Maple Season is well underway, and Swiss'er Sweet Maple continues to make the same great maple syrup and products that it has always produced for generations in the foothills of the Adirondacks. But did you know their is now a new grading system in place for NYS Maple syrup?  To help our customers understand the same great taste with the new labeling system, see the new grading system below for our delicious Grade A maple syrup:

  • Light Amber is now known as Delicate Taste
  • Medium Amber is now know as Rich Taste
  • Dark Amber is now Known as Robust Taste
