I cannot believe that I am saying that. You know how there is at least one food item in the world that you hate...no matter how many times you try it, no matter how many different ways it is prepared...you still hate it. Well, for me that is cauliflower!
I can remember my mom baking this big hunk of white vegetable stuffed with a sausage concoction and smothered in a cheese sauce in hopes that I would eat it. NOPE! In my opinion, there is nothing that would ever make that stuff taste good. Thank heavens for farmers, I am not the norm. lol I keep watching shoppers leave the market with at least one head of cauliflower each Saturday. They must know something that I have missed! So, I went on a search for some recipes to share. Who knows, I might even try one...maybe, maybe not!
I love broccoli, so this might be the one I try. :)
Cauliflower Broccoli Salad
1 head cauliflower, cored and broken into pieces
1 head broccoli, broken into florets
1 bunch green onions (6-8) chopped fine
1 cup mayonnaise
1 cup sour cream
1 1/2 teaspoons garlic salt (I would use chopped garlic scapes!)
Mix together and let marinate in the fridge overnight.
This one has bacon...now we are talking!
Cauliflower Bacon Salad
1 head cauliflower, broken into florets
1 small head iceberg lettuce, shredded ( use the Black Seeded Simpson available at market)
1 lb. Bacon, cooked and crumbled
2 – 3 tablespoons sugar
1/4 cup grated Parmesan cheese
1 cup mayonnaise
Layer in a bowl...in order. Cover with plastic wrap and chill overnight. Toss lightly before serving.
The only other thing that could make cauliflower taste great would be cheese!
Cauliflower and Basic Cheese Sauce
1/4 cup butter
1/4 cup flour
1/2 teaspoon salt
pinch cayenne pepper
1/8 teaspoon dry mustard
2 cups milk
1 cup Cheddar cheese, shredded
steamed cauliflower
Melt butter in saucepan, add flour, salt, cayenne and mustard. Stir until blended. Slowly add milk and cook stirring constantly until thickened. Slowly stir in cheese and heat, stirring constantly until smooth. Pour over steamed cauliflower!
I will report back if I tried any of these...maybe I'll just skip the cauliflower and eat the broccoli, bacon and cheese! Lol
