We use low tunnels (low arches supporting clear plastic sheeting} to grow greens and tubers in winter.    Only very cold-hardy species grow in Winter.   

We have lettuce, kale, collards, mustards, turnips and tubers like beets and carrots growing.

The salad greens business goes on, except in Mid-February vacation week.
