We are committed to using as many local ingredients as possible, beginning with 100% America-grown and milled flour. We use no white sugar in our breads, opting instead for local honey, fruit juice, and other natural sweeteners. We also use local eggs when available, as well as locally sourced produce and seasonings.
All of our bread uses some sort of slow-rise technique: mother starter, cold rise and/or sourdough leavening to achieve a complex and interesting flavor. It is one of life's little graces that a slower rise, which adds flavor, also makes the bread more nutritive.
In addition to bread, we make granola, croutons, stuffing mixes, and other processed/baked goods with the same high standard of quality and conscience.
We are also working on our gluten-free (or at least "gluten-friendly") options, and hope to have a few varieties available by the end of September.
At some point, we would like to add a CSA option, but we have not worked out enough details at this time. This year marks the beginning of our bread adventure. We are learning all along the way, and meeting wonderful people. Though we don't know exactly where it will lead in the end, we are definitely enjoying the ride.
