The shipment arrived in a timely manner, and the lard, bacon, and pork hock were all in excellent condition when they arrived at my Georgia address.
The lard was particularly good. When used for baking, it gave me biscuits that were moist, tender, and flaky. The flavor was somewhat different that what I am used to for lard; rather than having a neutral flavor, it left something of a porky aftertaste. This flavor may have been a consequence of the rendering process.
The bacon and pork hock were also outstanding. The bacon was quite lean, and I was able to use it in the same sort of recipes in which I've used the pork hock: namely the cooking of dishes involving cabbage and black-eyed peas. The thick cut of the bacon also made it both substantial and filling. Unlike supermarket bacon, which is often useful only as a condiment, two strips of Sweetbriar Farms bacon make a substantial component of a full meal.
I am quite pleased by the quality of all of these pork products, and definitely intend to order them in the future.
