I purchased a turkey from Three Moon Farm for Thanksgiving this year (2011). Oh my gosh was it fabulous! The bird was cleaned from all feathers. I received all parts that I asked for. I received directions on how to cook a pasture turkey. I can't say enough about the raw turkey all the way to the cooked turkey. It was the moistest and most flavorful turkey I've EVER had! I had a 30 pound turkey. I cooked it at 325 degrees in a rack in a large pan with water in it. In the two cavities of the turkey, I put in an apple cut into fourths, several celery stalks cut in half, two onions cut in fourths, and two lemons halved. I squeezed the lemons over the turkey first and then put those lemon halves in both turkey cavities. Also, I rubbed the turkey with some softened butter, salt and pepper before putting it in the oven. After four hours I put two meat thermometers in the turkey, one in the breast and one in the thigh. The juices that came out were clear so I knew it wasn't going to take a lot more time. I cooked the turkey until both thermometers read at least 165 degrees (one read 165 and the other 170). Total cooking time was about 5.5 hours. You would think a 30 pound turkey would need 7.5 hours to roast (30 lbs. divided by 15 minutes/ pound) but it didn't, 5.5 hours was it! I never changed the temperature of the oven. I kept it at 325. I did have to cover the top of the turkey with aluminum foil after 3.5-4 hours so the top wouldn't get too dark. Once the thermometers reached at least 165 degrees, I turned the oven off and let it sit for 20 minutes in the oven. I pulled the turkey out of the oven and let it sit on top of the oven covered with the aluminum foil for another 30 minutes before carving. It was so easy to carve because it was so juicy and tender. The meat had so much flavor. I've never had turkey that good. It was absolutely delicious! All of my 14 guests raved about how moist and delicious the turkey was. Throughout dinner and even after having seconds, that's what they continued talking about, how moist the turkey was and oh so flavorful. I'm already ordering my turkey for next year!
