Kim Berg and Kathe Kitchens have grown this farm from a small hobby garden over the past year, and it's been quite the education for me to watch it blossom. And this is just the beginning - the expansion is on-going and I look forward to seeing how productive they end up making their outside-city-limits oasis! They are rapidly turning unproductive and water-hungry lawn into a lovely cultivated plot with ever-expanding varieties literally ripe for the picking.
Kim and Kathe have a true passion for organic gardening, and even more importantly, for sharing it with others through their comprehensive selection of fresh and dried herbs and their eagerness to educate those of us new to the concept. They are generous with their time, tools, techniques, and their product, and are truly an inspiration to aspiring and seasoned gardeners alike.
I especially love is how Kim and Kathe educate us on how common herbs like basil, lemonbalm, and sage, to name a few, can be used for medicinal purposes, not just for cooking. When you stop by their booth at a local farmer's market, you are not just buying a few herbs (for way cheaper than the "fresh" herbs you find at the grocery store, btw), you are buying a healthy mindset full of tips and tricks to cure common ailments without resorting to artificial drugs and their side affects. It is through them that I've started brewing basil flower and lemonbalm tea, which I drink iced through the heat of our Texan summer - it is so refreshing, caffeine free, and a good tonic to aid digestion (to me, that's just a bonus - the taste is enough to have me hooked!)
Look for the gals in pink shirts at your next farmer's market in the Belton Area, or drop them a line. Whether or not you pick up some herbs for dinner or an upset stomach, they are a wealth of information generously shared!
