When one hasn't had natural, clean, tender, flavor full piece of pork in a while it takes you by surprise when you do. The experience teaches you that what is being sold at groceries stores is NOT the real McCoy. Cooking time is very short and does not render as much fat and water as factory pork. I would recommend Lucky Diamond Ranch pork to anyone. The one thing to understand and be mindful when shopping from local vendors. Be patient. It is not a factory. You have to wait your turn and be thankful that you have access to a local farmer's work and product. This is NOT easy work, not 9-5 and sometimes these farmers have 3 jobs. 1) farmer, 2) business person, 3) working for others.
