The person who gave it to me explained that your big, commercial flours from the grocery store can be really quite old. Who knows how long they've been on the shelf. And before that, how long they were in warehouses, sitting on pallets, and traveling half way across the country. I just looked at a sack of flour from the grocery store I had in my cupboard. It's 'sell by' date is June 2012!! Your flour could be several YEARS old.
And we know freshly ground coffee is SO much better, and freshly ground herbs and spices are superior. So, it only stands to reason that after the wheat is ground up, it's going to start losing flavors, aromas and degrading as it sits around too.
So, I just made a trip to the store to see the place, and get more flour. The pastry flour I got was milled THAT DAY! And I bought some fun mixes for gifts that were just days old.
Besides the great products, the old mill is a fun place to take people. The store is beautiful. And, as they mention in their profile, there's dairy, honey, syrup and baked goodies too. And there's a charming book store in the same building.
And, I personally don't care about gluten free. But for those who do, the owner said they're finishing up their facilities for making it, so it'll soon be on offer too.
