I met Edmund Joseph Pilz (E.J.) many years ago. Worked for the gentleman for a bit when I was a kid. Later in years used to help him with special contracts. We always worked, agreed, and conducted business on a handshake. In the early 60's Ed reintroduced to the English Colony (Penryn) the citrus fruit. That is another story. Since then many other farmers have realised the quality and perfect growing (almost, missing the freeze) conditions of the Penryn area. Steve and Lisa wait until the fruit gains the ultimate sugar content by using a basic spectrometer. Also during the sorting process Steve gives a 'taste test' quite a few times a day to assure the quality of the product. If you go to the ranch check out his hands, they are orange from pealing the Mandarins for quality control.
