The California Mission Olive is a variety unique to the US, first brought over by Jesuit and Franciscan missionaries in the late 18th century. California Mission Olives are unique in that they are suitable for both the pressing of oil and the curing of table olives. Both black oil-cured and green brine-cured table Olives are mild in flavor. The recent restoration of an original grove, which had once belonged to Mission La Purisima ConcepciĆ³n, is providing authentic cuttings of original Mission trees for new plantings

We then cold press the olives within 24 hours (typically within 12 hours), in order to ensure the freshest, most flavorful oil. We naturally decant each batch rather than filtering the oils.
