Today's Recipe Wednesday comes from Linda McMaine at McMaine's Riverhaven Farm in Mercer County. Linda is one of the founding members of the Bluegrass Farmers' Market and is currently serving as our President. The great news is she might even have some arugula on opening day...this Saturday, April 13th! :)
Pasta with Arugula Pesto
Ingredients
1/4 cup chopped walnuts
3 cloves garlic, minced
2 cups coarsely chopped arugula, stems included
1/4 cup coarsely chopped fresh basil
1/2 cup olive oil
1/3 cup grated Parmesan cheese
salt to taste
1 pinch cayenne pepper
1 (16 ounce) package dry pasta
Directions
Combine the walnuts, garlic, arugula and cilantro or basil in a food processor or blender. Whirl them until they are coarsely chopped. While the machine is running, add the olive oil in a thin stream. Transfer the pesto to a bowl (at this point the pesto can be frozen. Thaw it before proceeding.)
Stir the Parmesan cheese, salt and cayenne into the pesto.
Bring a large pot of salted water to a boil. Add the pasta and cook it, stirring occasionally, until it is just tender. Drain the pasta and return it to the empty pot. Add pesto and toss, adding a tablespoon or two of water if necessary to distribute the pesto evenly.
Transfer The pasta to a serving bowl or individual plates, garnish with additional Parmesan cheese and serve.
Remember...we open this Saturday!!!
Today is the start of a new, fun feature at the Bluegrass Farmers' Market...it's Recipe Wednesday! Each Wednesday we'll post a recipe that hopefully will give you some ideas on how to prepare or use the items available at the market. Okay, I know that the market does not open until the 13th but I wanted to see how this will work out before the market opens. So here goes...
My mom thought that eating lettuce would make her nose twitch like a rabbits nose. She hated green salads so I didn't get to enjoy more than an occasional head of iceberg lettuce tossed with some lemon juice and oil. My nose did not twitch and I have become a lover of all things crispy, crunchy and green! :) I have semi refined my childhood recipe to include other wonderful things. This recipe is not set in stone because honestly, I do not measure...I am a dumper! lol If you think it needs more of something please feel free to adjust to your taste. This is a great start. :)
Dijon Honey Lemon Dressing
2 tablespoons lemon juice
2 tablespoons honey
1 clove garlic, finely chopped
1 tablespoon Dijon mustard
1/4 cup olive oil
pepper
kosher salt
Whisk everything together, salt and pepper to taste and pour over salad greens.
If you have a recipe that you would like to share with us, please do so by emailing it to fromourfarms@aol.com We'd love to hear from you and if you have a story to share about the recipe, please include it too!
~*~*~ BGFM Opening Day – April 13th! ~*~*~
It's March 1st and that means it is the meteorological start to spring! It also means only 42 more days until the start of the Bluegrass Farmers' Market 2013 season! And, this season looks like it might be even better than last year...if that is possible. I have been told that there has been quite a few new farmers interested in joining our current membership. New farmers mean new items! That's a good thing for our market and a great thing for our customers.
It's gonna be a great season!

Okay, I am getting antsy. The first of my seeds arrived yesterday and I want to go get my hands dirty. Unfortunately, we still have some snow and the ground is very hard. Oh well, I can dream! :)
Actually it's not so bad...we're only 65 days and a wake up before we start our 2013 Bluegrass Farmers' Market season! That's right, the opening day is April 13th! The Richmond Rd. location hasn't changed. You'll find us set up in the parking lot of Pedal the Planet and Fast Signs once again. Yup, that's the market with all of the convenient, free parking and honest to gosh homegrown or produced products. We might be small but we are great in so many ways!
If you haven't had a chance to visit our new website, please take a moment and see the new goodies.
http://www.bluegrassfarmersmarket.org
You can click on the vendor list to see our members. The great part is, you can now click on some of the farms and be taken directly to either their web page or send them an email. We have dear Ed to thank for updating the site.
The farmers are always trying to please our customers, so if you have any ideas, requests or just want to say hi...go ahead and leave us a comment.
We'll see ya soon!
This is it...Saturday will be the last market day of the 2012 season. It's always a bittersweet day. The fields are showing the signs of the season and growth has slowed down. The farmers are tired and looking forward to a wee bit of a break...like that ever happens! Lol They will be spending the next few months ordering seed, getting the fields ready for spring planting and even planting fall crops like garlic. But the saddest part is not seeing the smiling faces that we all have become accustomed to on Saturday morning...our customers. :) We'll miss you, but we'll be back in April!
2012 was a great year for the Bluegrass Farmers' Market! We welcomed new farmers who brought a variety of new items to the market. We now have beer cheese, lamb, goat, rabbit, homemade pet treats, grape jelly and even more baked goodies! We opened the Willow Oak satellite location and the area customers loved it! We showed our appreciation to our customers by making sure that they had market tote bags to shop with...they were a big hit! Although we were not voted number one in Kentucky for the third year in a row, we did win our class! Thank you all for your votes! It's a very nice feeling to know that our customers went out of their way to show how much they appreciate our farmers. Heck, it makes our hard work worthwhile and it really makes us wish that it was April already! It'll be here soon...we promise!
Okay, enough about our wonderful season....we have our last Saturday market to talk about! The farmers will still have all sorts of goodies available. Maybe it's time to stock up on a few things!
Here's a bit of what you'll find on Saturday...

I hate this time of the year only because it means we are only 2 weeks away from the close of the 2012 market season. I love the fall beauty and the “not so average” veggies that are available. I say not so average because most folks do not go into a grocery store and see crisp green kale, mustard and turnip greens. If they have them, they are from a farm in who knows where and they come already packaged in a plastic bag! Crisp, fresh and bright green is soooooo much better purchased right from the farmer at our market. If you are new to “greens” cooking, just ask the farmer how his family prepares and enjoys them.
Another veggie that will be hard to find at a grocery store would be winter squash. Okay, I did see some at our “go to” grocery this week but the vegetable manager had no idea where those “things” came from and what to do with them. One was a spaghetti squash and the other one was a hubbard squash! I hope you get the gist of this. If you want to try something new, something other than the usual, something actually homegrown and not trucked in to the grocery store...than you need to shop at a farmers market! The best choice would be Lexington's only guaranteed 100% homegrown/produced farmers market...the Bluegrass Farmers' Market!
The farmer members are knowledgeable about what they sell, they grew it! Do not be afraid to ask about something that is new to you. I can almost guarantee if they grow it they eat it. Although we do have a farmer who hates tomatoes and yet he grows some real beauties! Lol Another member sells a hand blended curry mix and they actually had to have customers taste test it because they do not like curry in any size, shape or form. It just confirms how much work goes into everything available at one of Lexington's little gems...the Bluegrass Farmers' Market! Even though it is near the end of the season, it's still worth the hop, skip and a jump out Richmond Rd. to visit us...we might be small but we are great!
So, what will you be able to find at Lexington's only 100% homegrown/produced farmers market this week...
TOMATOES
PEPPERS...Hot and Sweet!
EGGPLANT
WINTER SQUASH...Butternut, Kabocha, Seminole, Hubbard, etc.
SPAGHETTI SQUASH
GREENS...Kale, Mustard, Turnip, Swiss Chard, etc.
CABBAGE
PUMPKINS

CILANTRO
BASIL
EGGS
CHEESE SPREADS

Brrrrrrr! There is a wee bit of a nip in the air this morning. Guess it is time to pack away the summer shorts and bust out the long britches. It's a melancholy time for me...I love the crisp fall days but I will miss the heat of the summer days too. The great thing is the season change brings many new items to the market. Fall is not fall without pumpkins, butternut squash and beautiful deep green kale! Hey, don't forget the summer hanger-ons too! I think I made up a new word, but you know what I mean. The tomatoes, zucchini, peppers, etc. that still keep growing up until that first frost hits.
By the way, I froze a gazillion peppers this past week...it's so easy. I wash, pat dry and then cut them. This is where I always seemed to spend more time than necessary...until my hubby showed me an easy way to avoid scooping out the seeds in a bell pepper. It was a “DUH” moment for me! Lol Simply set the pepper upright and using a sharp knife, start slicing downward from the stem...kinda in a curved motion so to avoid cutting into the core/seed area. You'll get about four sections that you can slice into smaller strips if that is what you want. No more picking seeds out! :) I then put them on a sheet/cookie pan and set in the freezer till frozen and then I store them in freezer bags until I need them. This way you can use only what is needed for that winter recipe that just has to have some peppers in it! :) One more little tip, the white or pithy part of the inside of the pepper is where any bitterness would come from, so slice it away!
Okay, enough blabbing from me...let's get to the important stuff like what you'll be able to find at the Bluegrass Farmers' Market this Saturday!

Oh my gosh, I went to the grocery store today and I have a major case of sticker shock! EEK! I keep reading and hearing about how expensive it is to shop at a farmers market. Whoa, back up and go to your local grocery store. I have to admit that I grabbed “Barry” in the produce department and asked him if he realized that I could buy locally grown cucumbers, potatoes, tomatoes, melons, eggplant, squash, peppers and so on for at least half of what they were charging! Poor “Barry” thought I was attacking him and he went on to explain that the price increase had something to do with the way farmers are growing these days. Okay, now I am totally confused because our farmers put seeds, corms, roots, eyes, etc. into soil and then watch the stuff grow. Granted, you have to weed, water, pick off the pests, talk to the plants...you know, farm! It finally dawned on me, maybe “Barry” was trying to explain that the big guys who supply grocery stores use tricks and stuff that is not natural to most of us. I put the kale back in place...under the beautiful spray of water that is trying to make them look fresh without much success. I will wait until Saturday when I can purchase some honest to gosh homegrown fresh kale at the Bluegrass Farmers' Market. Sorry “Barry” but my money is going to local farmers at a much better price!
So, what else can I find at the market this Saturday...

The results are in and the Bluegrass Farmers' Market came in second place in the Commonwealth of Kentucky according to the America's Favorite Farmers Market contest. We were number one in the mid-size category! Heck, our little 100% homegrown/produced market has been voted #1 in Kentucky in 2010 and 2011 and this year the big guys finally beat us. Congratulations to the Lexington Farmers Market. It just shows us, the Bluegrass Farmers' Market, that we are going to have to work harder next year to educate the local public that there is a difference between the two markets. The great part is, Lexington has the top two markets in the Commonwealth! WTG Lexington!
Don't forget...

This is a special weekend, it's Labor Day! The first Labor Day was celebrated on September 5, 1882. It was a day to pay tribute to the creators of our nations strength, freedom and leadership...the American worker! I can't think of a better American worker than the farmer. Without farmers there would be nothing else...we have to eat in order to fuel our bodies so that we can work. Please join us in showing your support for the American farmer on Labor Day by shopping at a local farmers market. Of course, we hope you choose Lexington's only 100% homegrown/produced market...the Bluegrass Farmers' Market!
Now for a few reminders...
