Our dairy animals are given a new pasture with fresh grass each day from late April through mid-October. They are fed haylage and a small amount of organic corn, which is grown on our farm. Most of our milk is sold through Organic Valley, but we occasionally keep a small amount of milk back to be made into organic Cheddar (8 varieties), Gouda (3 varieties), Feta, Moochego (Cow milk Manchego), and MooVache, a soft, spreadable, Chevre-style cheese made with our organic cow milk (7 varieties).
Our beef animals are 100% grass-fed from May through October, and over the winter they are fed organic dry hay, organic balage (higher moisture hay) and a small amount of organic corn silage, which is grown on our farm. The corn silage is less than 5% of their diet over the winter.
Certified organic piglets are purchased from a local organic farm to be raised for our organic pork. Our pigs are raised outdoors with plenty of room to exhibit their natural behavior and be pigs!
Our animals are not confined. Organic standards do not allow the use of antibiotics, hormones, synthetic wormers, GMO feeds or animal by-products. We raise all of our own organic feed, which is produced without pesticides, herbicides, fungicides and chemical fertilizers.
We outgrew our small farm store on the farm, and in June 2018 we purchased a historic building in the center of Nichols. A new store space and licensed kitchen were renovated, and in March 2019 we moved our farm store to the Creamery building located at 263 W River Rd, Nichols. Our focus is organic and local, and in addition to our own products, we sell products from other local organic and sustainable farms. Hot soups, seasonal dishes and baked goods - made with all organic and local ingredients - are available in the new store.
