We met Mr. Butcher and his wife this summer at the newly opened Poolesville, MD Farmers' Market. Though we hadn't yet tasted the various cuts of beef we chose, we knew that we were in for a treat. There was a sense in pride and responsibility that came across in the conversation about the land, the animals and, finally, with a warm handshake and promise: If you don't like your purchase, come and let me know.
Like it? We loved it. We are not heavy beef eaters and so when we do make a stew, roast, or ground beef dish - we really want it to be savory. Mr. Butcher was back several weeks later on market day. He remembered us and asked how the meat was.
Our answer was to stock up on more for the freezer and to thank him for his craft and dedication to growing food that we want to eat!
