Eons of dining on Lapin (rabbit), has been a Sunday family treat.So,thank you,Crystal for your commitment to this enterprise.Whole,halved or quartered prepared at your source, Chaudhry Halal Meats, the rabbit is always expertly dressed making the cook's preparations a snap.Low fat,low cholersterol rabbit for me is a healthy choice and a high quality protein.One fast recipe and easy clean-up: 1.Soak cleaned rabbit in salted water overnight 2.Following day,place pieces in a plastic 1 gal. Ziplok plastic bag filled w/a few of the natural herbs.Shake 'em up.( I season according to my mood) 3.Select from:Italian,curried Indian,or w/ Herbs de Province, Rosemary, Sage,Tarragon, Thyme,etc. Might add mustard or a cold pressed quality olive oil...all blended together to rub into or brush onto the rabbit.4. Then place in a Pyrex or aluminum foil roasting pan. Depending on size and weight of rabbit, set temp at 350-425 degrees, and bake for 30-45 minutes.One day I may try cooking spiced rabbit in my Sharp Microwave- Convection oven.So appreciate you,your ingenuity, professionalism & efforts!
