We use a local USDA butcher to process all of our meats, and he packages the giblets and neck from each turkey and then adds them back into the cavity. The package can be difficult to reach and you may have to try from both ends of the turkey. You will also need to wait until the turkey is completely thawed to reach the pack as it will be frozen and stuck inside. We have never encountered a situation where the neck and giblets are missing, but it is not impossible, as each turkey is handled by a person, not machines.
