Ozark Akerz Regenerative Farm

I've known Mike and Sue for a few years. When I met them, Mike had on a t-shirt that read:"Graze Against the Machine". That was quite the conversation starter! I was interested their beef and so far we have tried burgers and a couple of sirloin steaks. We don't eat a great deal of beef, but my wife and I were both blown away by the depth of flavor we experienced. We used only salt and pepper so we wouldn't mask the taste. I have eaten in high-end steak houses in Chicago, New York and Washington, D.C., but have never tasted "beefier beef", if that makes sense. It has such an intense richness and a buttery texture that feels like it just melts away. We still have a couple of bone-in rib eye steaks and a large chuck roast (which will be our Christmas dinner!), that we can't wait to try.
