Leaning Cedar Ranch

Purchased my first whole lamb from Leaning Cedar. I was invited to come out to the ranch, look at the stock, pick the one I wanted, and talk to the rancher about the characteristics of each. I made my choice and we talked about timelines for harvesting and processing. The rancher can also act as agent with the processor (based in Navasota), and I agreed to that and provided my preferences/instructions for butchering. I paid for the lamb that day (flat rate, approximate delivered weight).

Once the lamb was processed, I picked up the meat at the processor (I asked for and paid for vacuum-freeze packaging). It was well packed, boxed and labeled. Based on the prior discussion with the rancher, the delivered weight was slightly over the estimate - a nice bonus. I paid the processor for their service and took it home to pack my freezer.

I was able to grill shoulder steaks that night and they were spectacular - fresh taste and top quality.
