The rabbit meat produced from Alison (aka The Rabbit Lady) is first class and stands up to the best available organic meat rabbits in North America. I, as a caterer and chef, have served her rabbits many different ways and they have never disappointed the taste buds of some of the finest foodies this side of the Rocky Mountains. It is not only a sustainable product but when raised in conditions like the Rabbit Lady's operation, it is environmentally friendly and humane. If one chooses to debone the rabbit meat, the broth made from the resulting bones is absolutely exquisite and compares to some of the finest broths that I can recall. And, if one goes a step further and saves the leftover meat from the "soup" bones, so to speak, and make filled pastas with them to serve with the rabbit broth, one cannot find a better first course anywhere! Try The Rabbit Lady's rabbit once, use all of it as one should, and you will not be disappointed. It is as versatile as it is easy to prepare.
