We stopped at Meadow Rock Farm's booth at the 2008 Pittsburgh Home & Garden Show. Susan had many varieties of seasonings for dips that we were able to try and purchase at the show. After talking to Susan at the home show about her CSA, we were impressed with her knowledge and enthusiasm and signed up for the 2008 season.
We certainly got great value and lots of healthy, different vegetables and herbs during the 2008 season. Erik and Susan had put in a chicken coop and we were able to get fresh eggs from a variety of breeds. Some of the eggs were Easter egg colors.
Who knew that kohlrabi would become one of my favorite vegetables!. It is absolutely wonderful when it is freshly harvested. Erik and Susan had an abundent crop of peppers (sweet and hot). I had chopped and froze many of the various varieties of sweet peppers and I have been enjoying them in various recipes all winter. I can't wait for the first pick-up this 2009 season!

If I wanted regular, garden variety tomatoes, beets, squash, etc., I would stop at the local farm market!
I love that Meadow Rock is farming organically. They also offer a wide variety of heirloom vegetables. One of my favorites are the Striped Tomatoes. They are striped with yellow, red and orange which are incredibly sweet and delicious on a BLT sandwich. Another favorite are the Golden and Chiogga (ringed with red and white) Beets. Why settle for regular red beets when these add color and great flavor? I love to roast them in the oven and add them to salads.

One of the joys of working with Meadow Rock Farm (Susan & Eric) is the opportunity to try new (and wonderful) foods. I would
never have the courage to buy and prepare! Kolarabi is my new favorite vegetable. Who knew pulling kale leaves from the stem left a wonderful (better than spinach!) green?! Withe patience & persistence, Susan preaches "just try it once" with humor and
great cooking tips. On my list of favorites: fresh garlic with actual juice, peanut potatoes (a personal best for Eric) and a variety of herbs which allows me to cook with an eye to health and flavor.
Can't wait for spring!
