1. Process produce and meats for personal consumption:
Bring produce of your choice to preserve for year-round use! The Cannery also offers processing equipment for meats. For food preserved for personal use only, it will be processed into bi-metal cans and these cans must be purchased at the Cannery. The Cannery is open for use by folks processing foods for personal use only on Monday, Tuesday, and Wednesday mornings from June through December. 2. Processing produce for retail sale (no meats can be processed for resale):
A separate service provided by the Cannery is the use of the facility as a commercial kitchen. Since 2012, Virginia Food Works has been offering assistance and contract packing ("co-packing") services to farmers and food entrepreneurs wanting to create refrigerated, frozen, or shelf-stable foods to sell directly to the public or through retailers and wholesalers. These food businesses are the Cannery's "Commercial Clients" and they may use glass or plastic containers. Commercial Clients are not permitted to process in bi-metal cans.
