Apple Maple White Cheddar Pie

Ingredients:

½ C demerara sugar, plus 2 T separate
2 T flour
½ t cinnamon
¼ t nutmeg
¼ t salt
5 C apples, peeled and thinly sliced
1 ½ C white cheddar, shredded
¼ C maple syrup, plus 2 T separate
1 T heavy cream
Dough for a 2 crust pie

Directions:

  1. Preheat oven to 375°
  2. Prepare bottom crust in a nine inch pie plate
  3. In a large bowl, stir together ½ C sugar, flour, salt and spices. Add apples and toss to coat.
  4. Gently stir in cheese and ¼ C of syrup
  5. Transfer apple mixture to pie plate. Sprinkle with cream
  6. Add top crust, pinch to seal and piece in a decorative pattern
  7. Bake until pastry is golden and apples are tender, about one hour. If edges brown too quickly cover with aluminum foil
  8. When pie is done baking, remove from oven and set on wire rack to cool
  9. Brush top with remaining maple syrup and sprinkle with reserved sugar
  10. Allow to cool for one hour before cutting
