Ingredients:
½ C demerara sugar, plus 2 T separate
2 T flour
½ t cinnamon
¼ t nutmeg
¼ t salt
5 C apples, peeled and thinly sliced
1 ½ C white cheddar, shredded
¼ C maple syrup, plus 2 T separate
1 T heavy cream
Dough for a 2 crust pie
Directions:
- Preheat oven to 375°
- Prepare bottom crust in a nine inch pie plate
- In a large bowl, stir together ½ C sugar, flour, salt and spices. Add apples and toss to coat.
- Gently stir in cheese and ¼ C of syrup
- Transfer apple mixture to pie plate. Sprinkle with cream
- Add top crust, pinch to seal and piece in a decorative pattern
- Bake until pastry is golden and apples are tender, about one hour. If edges brown too quickly cover with aluminum foil
- When pie is done baking, remove from oven and set on wire rack to cool
- Brush top with remaining maple syrup and sprinkle with reserved sugar
- Allow to cool for one hour before cutting
