Ingredients:
3 T butter, melted plus 1/3 C room temperature separate
½ C
maple syrup
1 T apple brandy
3 baking apples
¾ C sugar
2 eggs, seperated
1 ½ C flour
2 t baking powder
½ t
cinnamon
¼ t salt
1 C milk
Directions:
- Preheat oven to 350°
- Grease 8x8pan with melted butter, pour in syrup and sprinkle with brandy
- Peel and core the apples. Grate ½ of one apple and set aside, should be about ¾ C. Cut remaining apples into wedges (8 wedges from each whole apple)
- Arrange wedges in the pan on the syrup/brandy
- Cream remaining butter and ½ C sugar together. Beat in egg yolks
- Sift together flour, baking powder, cinnamon and salt. Alternate adding flour mixture and milk to creamed butter. Fold in grated apple
- Beat egg whites until stiff peaks form, beat in sugar and fold into cake batter
- Pour batter over apples and syrup, even with spatula if necessary
- Bake until lightly golden and set in the center, about 40 minutes
- Allow to cool for 5-10 minutes and invert onto serving dish
