Ingredients:
6 large baking apples, free of blemishes, cored
3 T raisins, chopped
3 T dried cranberries, unsweetened
2 T walnuts, toasted and chopped
2T almonds, toasted and chopped
½ C apple cider
3 T maple syrup
3 T butter, cut into 6 ½ T pieces
Directions:
- Preheat oven to 400°F
- Place apples in baking dish
- Stir together raisins, cranberries, walnuts and almonds, fill holes in apples
- Drizzle ½ T maple syrup inside each apple, top with butter chunk
- Pour cider into dish
- Bake for 25 minutes, or until tender, occasionally basting with cider
- Remove apples from dish, simmer remaining liquid in a small sauce pan until reduced to syrup
- Pour over apples
Serve alone or with vanilla ice cream
